Strawberry Brownies

These Strawberry Brownies are the perfect combination of a chewy, fudgy texture with a burst of fruity strawberry flavor! Made with a simple strawberry cake mix, these bars are soft, vibrant, and incredibly easy to make.

Ingredients (Makes 12-16 Brownies)

For the Strawberry Brownies:

  • Strawberry cake mix – 1 box (425g)
  • Vegetable oil – 80ml (⅓ cup)
  • Eggs – 2 large
  • Vanilla extract – 1 teaspoon

For the Strawberry Glaze:

  • Powdered sugar – 120g (1 cup)
  • Strawberry jam or puree – 2 tablespoons
  • Milk or heavy cream – 1-2 tablespoons
  • Vanilla extract – ½ teaspoon

Instructions

Step 1: Prepare the Brownie Batter

  1. Preheat your oven to 175°C (350°F) and line a 20×20 cm (8×8-inch) baking pan with parchment paper.
  2. In a bowl, mix the strawberry cake mix, eggs, vegetable oil, and vanilla extract until smooth and thick.

Step 2: Bake the Brownies

  1. Spread the batter evenly into the prepared pan.
  2. Bake for 18-22 minutes or until the edges are set but the center is slightly soft.
  3. Let the brownies cool completely before adding the glaze.

Step 3: Make the Strawberry Glaze

  1. In a small bowl, whisk together powdered sugar, strawberry jam (or puree), vanilla extract, and milk until smooth.
  2. If the glaze is too thick, add a little more milk 1 teaspoon at a time until pourable.

Step 4: Glaze & Serve

  1. Drizzle or spread the glaze over the cooled brownies.
  2. Let set for 10-15 minutes, then cut into squares and enjoy!
