Ingredients (Makes 12 Muffins)

For the Muffins:

  • All-purpose flour – 250g (2 cups)
  • Granulated sugar – 150g (¾ cup)
  • Baking powder – 2 teaspoons
  • Baking soda – ½ teaspoon
  • Salt – ¼ teaspoon
  • Eggs – 2 large
  • Unsalted butter, melted – 115g (½ cup)
  • Greek yogurt (or sour cream) – 120g (½ cup)
  • Milk – 60ml (¼ cup)
  • Vanilla extract – 1 teaspoon
  • Fresh strawberries, diced – 200g (1 ½ cups)

For the Cream Cheese Filling:

  • Cream cheese, softened – 115g (½ cup)
  • Granulated sugar – 30g (2 tablespoons)
  • Vanilla extract – ½ teaspoon

For the Streusel Topping:

  • All-purpose flour – 60g (½ cup)
  • Brown sugar – 50g (¼ cup)
  • Unsalted butter, melted – 40g (3 tablespoons)
  • Ground cinnamon – ½ teaspoon

Instructions

Step 1: Prepare the Streusel Topping

  1. In a small bowl, mix flour, brown sugar, and cinnamon.
  2. Add melted butter and stir with a fork until the mixture forms coarse crumbs.
  3. Set aside.

Step 2: Make the Cream Cheese Filling

  1. In a separate bowl, beat together the cream cheese, sugar, and vanilla extract until smooth.
  2. Set aside.

Step 3: Prepare the Muffin Batter

  1. Preheat the oven to 190°C (375°F) and line a 12-cup muffin tin with liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the eggs, melted butter, Greek yogurt, milk, and vanilla extract until smooth.
  4. Gradually fold the wet ingredients into the dry ingredients, stirring until just combined (don’t overmix!).
  5. Gently fold in the diced strawberries.

Step 4: Assemble the Muffins

  1. Fill each muffin cup halfway with batter.
  2. Spoon 1 teaspoon of the cream cheese filling into the center of each.
  3. Cover with more muffin batter, filling each cup about ¾ full.
  4. Sprinkle the streusel topping generously over each muffin.

Step 5: Bake & Cool

  1. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
