Ingredients (Makes 18-20 Cookies)

For the Cookies:

  • 250g (2 cups) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 120g (½ cup) unsalted butter, softened
  • 150g (¾ cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp whole milk
  • 20g (¾ cup) freeze-dried strawberries, finely crushed

For Rolling:

  • 50g (¼ cup) granulated sugar
  • 1 tbsp crushed freeze-dried strawberries (for extra color & flavor!)

Instructions

Step 1: Prepare the Ingredients

  1. Preheat your oven to 180°C (350°F). Line a baking sheet with parchment paper.
  2. In a small bowl, mix flour, baking powder, baking soda, and salt.

Step 2: Make the Cookie Dough

  1. In a large mixing bowl, cream together butter and sugar until light and fluffy.
  2. Add the egg, vanilla extract, and milk, mixing until smooth.
  3. Stir in the crushed freeze-dried strawberries for that fruity flavor!
  4. Gradually add the dry ingredients, mixing until a soft dough forms.

Step 3: Roll & Bake

  1. In a small bowl, mix sugar and crushed freeze-dried strawberries for rolling.
  2. Roll the dough into 1-inch balls, then coat each ball in the strawberry-sugar mixture.
  3. Place the cookie balls 2 inches apart on the prepared baking sheet.
  4. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.

Step 4: Cool & Enjoy!

  1. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  2. Enjoy warm or store for later!
