These Street Corn Beef and Sweet Potato Bowls combine tender seasoned beef, caramelized roasted sweet potatoes, and creamy street-style corn inspired by traditional street food flavors from Mexico.

This bowl is a beautiful balance of textures and tastes — naturally sweet roasted potatoes, savory protein-rich beef, and a creamy, tangy corn topping that makes every bite exciting.

Perfect for meal prep, family dinners, or a hearty lunch, this recipe is both filling and nutritious while still feeling indulgent.

Ingredients

For the Beef

  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon cumin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Roasted Sweet Potatoes

  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ½ teaspoon paprika

For the Street Corn Topping

  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 tablespoons mayonnaise or Greek yogurt
  • 1 tablespoon lime juice
  • 2 tablespoons crumbled feta or Cotija-style cheese
  • 1 teaspoon chili powder
  • Fresh cilantro (optional)

Instructions

1. Roast the Sweet Potatoes

Preheat oven to 400°F (200°C).

Toss diced sweet potatoes with olive oil, salt, and paprika.

Spread on a baking sheet and roast for 20–25 minutes, flipping halfway, until tender and lightly caramelized.

2. Cook the Beef

Heat olive oil in a skillet over medium-high heat.

Add ground beef and cook for 5–7 minutes, breaking it apart with a spoon.

Add garlic powder, paprika, cumin, salt, and pepper.

Cook until beef is browned and fully cooked. Drain excess fat if needed.

3. Prepare Street Corn Style Topping

If using frozen corn, lightly sauté corn in a dry skillet for 2–3 minutes to warm and slightly toast it.

In a bowl, mix corn with:

  • Mayonnaise or Greek yogurt
  • Lime juice
  • Chili powder
  • Crumbled cheese

Stir well.

4. Assemble the Bowls

Divide roasted sweet potatoes into serving bowls.

Add cooked beef on top.

Finish with street corn topping.

Garnish with cilantro if desired.

Serve warm.
