Super Easy Homemade Cream Cheese

  • 4 cups (1 liter) whole milk
  • 2 tbsp white vinegar or lemon juice
  • ½ tsp salt (adjust to taste)

How to Make Homemade Cream Cheese

Step 1: Heat the Milk

  1. In a saucepan, heat 4 cups of whole milk over medium heat until it just starts to simmer (about 180°F or 82°C). Do not let it boil.

Step 2: Curdle the Milk

  1. Remove from heat and slowly add 2 tbsp of vinegar or lemon juice, stirring gently.
  2. Let the mixture sit for 5-10 minutes until the milk curdles and separates into curds (solids) and whey (liquid).

Step 3: Strain the Curds

  1. Line a fine-mesh strainer or colander with cheesecloth and place it over a bowl.
  2. Pour the curdled milk through the cheesecloth, letting the whey drain away.
  3. Gather the edges of the cloth and gently squeeze out any excess liquid.

Step 4: Blend for Smoothness

  1. Transfer the strained curds to a food processor or blender.
  2. Add ½ tsp salt and blend for 1-2 minutes until smooth and creamy. If needed, add 1-2 tbsp of whey to reach your desired consistency.

Step 5: Chill & Enjoy!

  1. Transfer to an airtight container and refrigerate for at least 1 hour before using.
  2. Enjoy your homemade cream cheese on bagels, crackers, or as a spread!
