This showstopping dessert is perfect for spring and summer celebrations, brunch, baby showers, or when you just want to impress with something that tastes like it came straight from a high-end bakery.

Makes 8–10 slices

For the sponge cake:

  • 4 large eggs, room temperature
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • Powdered sugar, for dusting the towel

For the cheesecake filling:

  • 8 oz cream cheese, softened
  • ⅓ cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold

For the strawberry layer:

  • 1 ½ cups fresh strawberries, diced
  • 1 tablespoon sugar
  • Optional: 1 teaspoon lemon juice

For the shortcake crumble topping:

  • ½ cup all-purpose flour
  • ¼ cup sugar
  • 3 tablespoons unsalted butter, melted
  • Optional: 2 tablespoons crushed freeze-dried strawberries (for color/flavor)

👨‍🍳 Instructions

1. Make the Cake Roll

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper.
  2. In a mixing bowl, beat eggs and sugar for about 5–7 minutes until pale, thick, and tripled in volume.
  3. Mix in vanilla extract. Sift in flour, baking powder, and salt, and fold gently until just combined.
  4. Pour batter into the prepared pan and spread evenly. Bake for 10–12 minutes, or until the top springs back when touched.
  5. While still warm, invert the cake onto a clean kitchen towel dusted with powdered sugar. Peel off parchment, then roll the cake up (with the towel) from the short side. Let cool completely.

2. Make the Crumble

In a small bowl, mix flour, sugar, and melted butter until crumbly. Stir in crushed freeze-dried strawberries if using. Bake on a small tray at 350°F for 7–9 minutes, until lightly golden. Let cool and crumble.

3. Make the Filling

Beat cream cheese, powdered sugar, and vanilla until smooth. In a separate bowl, whip the heavy cream until stiff peaks form. Fold whipped cream into the cream cheese mixture.

4. Macerate the Strawberries

Toss diced strawberries with sugar and lemon juice. Let sit for 10–15 minutes to release juices.

5. Assemble the Roll

Unroll the cooled cake. Spread with the cheesecake filling, leaving a small border. Scatter the strawberries evenly over the filling.

Gently re-roll the cake (without the towel) and wrap tightly in plastic wrap. Chill for at least 1 hour.

6. Garnish & Serve

Unwrap the cake and top with extra cheesecake filling (if you saved some) and a generous sprinkle of shortcake crumble. Add more strawberries on top for a beautiful finish.

Slice and serve chilled.
