Taco Casserole Recipe

May 16, 2025 by el hassan Leave a Comment

Description

This Taco Casserole is a Tex-Mex dream come true. It’s layered with all your favorite taco flavors — seasoned ground beef, gooey melted cheese, zesty salsa, black beans, corn, and crushed tortilla chips — baked to golden perfection in a single dish. It’s the perfect comfort food for busy weeknights, family gatherings, or when you’re craving tacos but don’t want the mess of assembling them one by one.

Think of it as a delicious cross between a taco and a lasagna, with layers of flavor that come together in under 45 minutes. Plus, it’s easy to customize with your favorite toppings like sour cream, avocado, jalapeños, or green onions. Make it once, and your family will beg for Taco Tuesday every day of the week.

Ingredients (serves 6–8)

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn (or canned, drained)
  • 1 cup salsa (mild or spicy)
  • 2 cups crushed tortilla chips (plus more for topping if desired)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions or cilantro (optional garnish)
  • Sliced jalapeños, diced tomatoes, avocado (optional for topping)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cook the beef: Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned, about 5–6 minutes. Drain excess grease.
  3. Add aromatics: Stir in diced onion and garlic. Cook for 2–3 minutes until softened.
  4. Season: Sprinkle taco seasoning over the beef mixture. Stir in salsa, black beans, and corn. Simmer for 3–4 minutes.
  5. Assemble the casserole: Layer crushed tortilla chips on the bottom of the baking dish. Spread the beef mixture evenly on top. Spoon over sour cream, then sprinkle shredded cheese across the top. Add extra chips if you want a crunchy topping.
  6. Bake: Place the casserole in the oven and bake for 20–25 minutes or until cheese is melted and bubbly.
  7. Garnish and serve: Remove from oven and let cool for 5 minutes. Garnish with green onions, cilantro, jalapeños, avocado, or tomatoes. Serve hot!

  • Add heat: Spice lovers can toss in jalapeños, chipotle peppers, or hot salsa.
  • Make it low-carb: Substitute crushed tortilla chips with thinly sliced zucchini or cauliflower rice.
  • Double it: Feeding a crowd? This recipe doubles easily and freezes well in portions.
