Tandoori Chicken Garlic Bread

Ingredients (in Grams)

For the Tandoori Chicken

  • 300g boneless chicken breast (cut into small cubes)
  • 100g plain yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 1 teaspoon red chili powder
  • ½ teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 tablespoon oil

For the Garlic Butter

  • 50g butter (softened)
  • 4 cloves garlic (minced)
  • ½ teaspoon dried oregano
  • ½ teaspoon chili flakes
  • 1 tablespoon fresh coriander (chopped)

For the Bread

  • 1 large baguette or ciabatta loaf (sliced in half lengthwise)
  • 150g shredded mozzarella cheese
  • 50g grated Parmesan cheese

Instructions

Step 1: Marinate the Tandoori Chicken

  1. In a bowl, mix yogurt, lemon juice, salt, red chili powder, turmeric, garam masala, cumin, coriander, garlic paste, and ginger paste.
  2. Add the chicken pieces and coat well.
  3. Cover and refrigerate for at least 30 minutes (or overnight for best flavor).

Step 2: Cook the Tandoori Chicken

  1. Heat 1 tablespoon oil in a pan over medium heat.
  2. Add the marinated chicken and cook for 5-7 minutes, until golden and fully cooked.
  3. Remove from heat and set aside.

Step 3: Make the Garlic Butter

  1. In a small bowl, mix softened butter, minced garlic, oregano, chili flakes, and chopped coriander.
  2. Stir well until combined.

Step 4: Assemble the Garlic Bread

  1. Preheat oven to 200°C (400°F).
  2. Spread the garlic butter evenly over both halves of the bread.
  3. Sprinkle a layer of mozzarella cheese and Parmesan cheese.
  4. Add the cooked tandoori chicken on top.

Step 5: Bake & Serve

  1. Place the bread on a baking tray and bake for 8-10 minutes, until the cheese is melted and bubbly.
  2. Garnish with fresh coriander and a drizzle of garlic butter.
  3. Slice and serve hot!
