  • 2 large chicken breasts, cut horizontally
  • 1 teaspoon seasoned salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter, plus extra if needed
  • 1 medium onion, sliced ¼-inch thick
  • ½ pound button mushrooms, sliced
  • ¼ pound Monterey Jack cheese, shredded
  • Salt, to taste

Instructions

1. Prepare the Chicken

  • Slice each chicken breast in half horizontally.
  • Pound the pieces between plastic wrap until even in thickness.
  • Season both sides with seasoned salt and black pepper.

2. Sauté the Vegetables

  • Melt 1 tablespoon butter in a large skillet over medium-low heat.
  • Add sliced onions with a pinch of salt and sauté for 3-4 minutes until soft.
  • Add mushrooms and cook for another 3-4 minutes until browned.
  • Remove the vegetables from the skillet and set aside.

3. Cook the Chicken

  • Add more butter to the skillet if needed.
  • Cook the chicken over medium heat for 6-8 minutes on the first side.
  • Flip and cook for another 3-4 minutes, or until the internal temperature reaches 165°F.

4. Smother with Toppings

  • Top each chicken breast with the sautéed mushrooms and onions.
  • Sprinkle with shredded Monterey Jack cheese.
  • Cover the pan for 1-2 minutes until the cheese melts.

5. Serve & Enjoy

  • Plate the smothered chicken immediately while hot.
  • Garnish with fresh parsley (optional) and serve with mashed potatoes, rice, or vegetables.
