  • 200g granulated sugar
  • 150g brown sugar
  • 2 large eggs (100g)
  • 1 teaspoon vanilla extract (5ml)
  • 110g all-purpose flour
  • 50g unsweetened cocoa powder
  • ½ teaspoon salt (2g)
  • ½ teaspoon baking powder (2g)
  • 100g dark chocolate chips

Cookie Layer:

  • 115g unsalted butter, softened
  • 100g granulated sugar
  • 80g brown sugar
  • 1 large egg (50g)
  • 1 teaspoon vanilla extract (5ml)
  • 180g all-purpose flour
  • ½ teaspoon baking soda (2g)
  • ¼ teaspoon salt (1g)
  • 100g semi-sweet chocolate chips

Instructions

Step 1: Prep & Preheat

  1. Preheat your oven to 175°C (350°F).
  2. Line a 9×13-inch baking pan with parchment paper and lightly grease it.

Step 2: Make the Brownie Layer

  1. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  2. Add the eggs and vanilla extract, whisking until combined.
  3. Sift in flour, cocoa powder, salt, and baking powder, then fold until just combined.
  4. Stir in the chocolate chips, then pour the batter into the prepared baking pan.

Step 3: Make the Cookie Layer

  1. In another bowl, cream together softened butter, granulated sugar, and brown sugar until fluffy.
  2. Mix in the egg and vanilla extract.
  3. Sift in flour, baking soda, and salt, then mix until just combined.
  4. Stir in the chocolate chips.

Step 4: Assemble & Bake

  1. Drop spoonfuls of cookie dough over the brownie batter, spreading it slightly but not fully covering the brownie layer (it will spread as it bakes).
  2. Bake for 30-35 minutes, or until the cookie top is golden and a toothpick inserted into the center comes out with a few moist crumbs.
  3. Let cool in the pan for at least 30 minutes before slicing into squares.

Tips & Tricks for Perfect Brookies

✔️ Don’t Overbake – Brookies should be slightly gooey in the center for maximum fudginess.

✔️ Use Quality Chocolate – The better the chocolate, the richer the flavor.

✔️ Chill the Dough – If you want thicker cookies, chill the cookie dough for 30 minutes before assembling.

✔️ Add Extra Toppings – Try mixing in walnuts, pecans, or peanut butter chips for extra texture.

✔️ For a Gluten-Free Version – Use a 1:1 gluten-free flour blend.

Delicious Variations to Try

???? Triple Chocolate Brookies – Use a mix of milk, dark, and white chocolate chips.

???? Peanut Butter Brookies – Swirl in 2 tablespoons of peanut butter into the brownie layer.

☕ Mocha Brookies – Add 1 teaspoon espresso powder to the brownie batter for a coffee kick.

???? Nutty Brookies – Mix in chopped pecans or walnuts for crunch.

???? Oreo Brookies – Crush Oreo cookies and sprinkle them over the top before baking.

What to Serve with Brookies

???? With Ice Cream – Serve warm brookies with vanilla, chocolate, or caramel ice cream.

☕ With Coffee – Pair with a hot espresso or cappuccino for a cozy treat.

???? With Hot Chocolate – A warm, gooey brookie + hot cocoa = chocolate heaven!

???? With Fresh Berries – Add a side of strawberries or raspberries to balance the richness.
