The BEST Fudgy Chewy Brookies

Can’t decide between brownies and cookies? Why not have both! These Fudgy Chewy Brookies combine rich, chocolatey brownies with soft, chewy chocolate chip cookies in one irresistible dessert. With a perfectly gooey texture and a crispy edge, this dessert is a must-try for any chocolate lover!


Ingredients (Makes 16 Brookies)

For the Brownie Layer:

  • 115g (½ cup) unsalted butter, melted
  • 150g (¾ cup) granulated sugar
  • 50g (¼ cup) brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 65g (½ cup) all-purpose flour
  • 30g (⅓ cup) unsweetened cocoa powder
  • ¼ tsp salt
  • 60g (⅓ cup) chocolate chips

For the Cookie Layer:

  • 115g (½ cup) unsalted butter, softened
  • 100g (½ cup) brown sugar
  • 50g (¼ cup) granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 150g (1¼ cups) all-purpose flour
  • ½ tsp baking soda
  • ¼ tsp salt
  • 100g (½ cup) chocolate chips

Instructions

Step 1: Prepare the Brownie Batter

  1. Preheat oven to 175°C (350°F). Line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. In a bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs and vanilla extract and mix well.
  4. Sift in flour, cocoa powder, and salt, and fold until combined.
  5. Stir in chocolate chips, then pour the batter evenly into the prepared pan.

Step 2: Prepare the Cookie Dough

  1. In a separate bowl, beat together softened butter, brown sugar, and granulated sugar until creamy.
  2. Add egg and vanilla extract, and mix until combined.
  3. Sift in flour, baking soda, and salt, and fold until just combined.
  4. Stir in chocolate chips.

Step 3: Assemble the Brookies

  1. Using a spoon, drop dollops of cookie dough over the brownie batter.
  2. Gently spread or press the cookie dough down slightly, but don’t fully mix.

Step 4: Bake & Cool

  1. Bake for 30-35 minutes, or until the cookie layer is golden and a toothpick inserted in the center comes out with moist crumbs (not wet batter).
  2. Let cool completely before slicing into bars.
