  • 50 g brown sugar, packed
  • 2 large eggs (100 g)
  • 120 ml vegetable oil or melted butter
  • 1 tsp vanilla extract (5 ml)
  • 1 tbsp milk (15 ml)

For the Snickerdoodle Topping:

  • 2 tbsp granulated sugar (25 g)
  • 1 tbsp ground cinnamon (6 g)

Step 1: Preheat the Oven and Prepare the Pan

  1. Preheat your oven to 180°C (350°F).
  2. Grease and flour a standard 9×5-inch loaf pan or line it with parchment paper for easy removal.

Step 2: Prepare the Zucchini

  1. Grate the zucchini using a box grater or food processor.
  2. Place the grated zucchini in a clean kitchen towel or cheesecloth, then squeeze out excess moisture. This is important to prevent the bread from becoming too soggy.

Step 3: Mix the Dry Ingredients

  1. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 4: Mix the Wet Ingredients

  1. In a large bowl, beat together the granulated sugar, brown sugar, and eggs until smooth and slightly fluffy.
