Ingredients (Serves 12)

For the Cake:

  • 160g (1 ¼ cups) all-purpose flour
  • 1 ½ tsp baking powder
  • ½ tsp salt
  • 5 large eggs, separated
  • 150g (¾ cup) granulated sugar, divided
  • 1 tsp vanilla extract
  • 80ml (⅓ cup) whole milk

For the Tres Leches Mixture:

  • 1 can (354ml) evaporated milk
  • 1 can (397g) sweetened condensed milk
  • 120ml (½ cup) heavy cream

For the Whipped Cream Topping:

  • 240ml (1 cup) heavy whipping cream
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

For Garnish (Optional):

  • Ground cinnamon
  • Fresh strawberries or cherries

Instructions

Step 1: Bake the Cake

  1. Preheat oven to 175°C (350°F). Grease a 9×13-inch baking dish.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, beat egg yolks and 100g (½ cup) sugar until pale and fluffy (about 2 minutes). Stir in vanilla extract and milk.
  4. In another bowl, beat egg whites until soft peaks form. Gradually add the remaining 50g (¼ cup) sugar and beat until stiff peaks form.
  5. Gently fold the egg white mixture into the yolk mixture. Slowly add the flour mixture, folding carefully until combined.
  6. Pour the batter into the prepared dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Step 2: Soak the Cake in Tres Leches Mixture

  1. Let the cake cool completely in the baking dish.
  2. In a bowl, whisk together evaporated milk, condensed milk, and heavy cream.
  3. Using a fork or skewer, poke small holes all over the cake.
  4. Slowly pour the tres leches mixture evenly over the cake. Let it soak for at least 2 hours (or overnight for best results).
