To Die For Carrot Cake

This To Die For Carrot Cake is incredibly moist, packed with flavor, and made without any oil or butter! Loaded with fresh carrots, coconut, and pineapple, this easy-to-make cake is topped with a creamy, indulgent cream cheese frosting. It’s a family favorite that’s sure to impress!

Ingredients:

Cake

  • 1 ¼ cups unsweetened applesauce (or oil)
  • 2 cups granulated sugar
  • 3 large eggs (room temperature)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups grated carrots
  • 1 cup shredded sweetened coconut
  • 1 cup chopped nuts (optional)
  • 1 tsp vanilla extract
  • 1 cup Dole crushed pineapple (with juice, not syrup)

Cream Cheese Frosting

  • ½ cup butter (softened)
  • 8 ounces cream cheese (softened)
  • 1 teaspoon vanilla extract
  • 1 pound powdered sugar
  • Toasted pecans or coconut for topping (optional)

Directions:

  1. Preheat oven to 350°F (175°C).
  2. Combine the wet ingredients for the cake (applesauce, sugar, and eggs) in a large bowl.
  3. Stir in the dry ingredients (flour, baking soda, baking powder, salt, and cinnamon).
  4. Add in the grated carrots, coconut, nuts (if using), vanilla, and crushed pineapple. Stir until well combined.
  5. Pour the batter into a greased 9×13-inch pan (or two 9-inch or three 8-inch pans).
  6. Bake for 35-40 minutes (9×13 or 9-inch pans) or 25-30 minutes (8-inch pans), until a toothpick comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  8. For the frosting, beat the butter and cream cheese until fluffy. Add vanilla and powdered sugar, and beat until smooth.
  9. Once the cake is cool, frost generously with the cream cheese frosting. Top with toasted pecans or coconut if desired.
  10. Refrigerate for 1 hour before serving for best results.
