Turkey Taco Burrito Bowls

These Turkey Taco Burrito Bowls are a fresh, flavorful, and healthier twist on a classic burrito! Loaded with seasoned ground turkey, rice, and your favorite toppings, this dish is a perfect option for meal prep or a quick dinner.


Ingredients

For the Turkey Taco Filling:

  • 1 lb ground turkey
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  • 1/2 cup water
  • 1/2 cup salsa

For the Bowl:

  • 2 cups cooked rice (white, brown, or cilantro-lime rice)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheddar or Monterey Jack cheese
  • 1/4 cup sour cream or Greek yogurt (optional)
  • Fresh chopped cilantro and lime wedges for garnish

Instructions

Step 1: Cook the Turkey Taco Filling

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes.
  2. Add the ground turkey and cook, breaking it apart with a wooden spoon, until browned and cooked through, about 5-7 minutes.
  3. Stir in the garlic and taco seasoning. Cook for 1 minute until fragrant.
  4. Add the water and salsa. Stir well and simmer for 5 minutes until the sauce thickens slightly. Remove from heat.

Step 2: Assemble the Bowls

  1. Divide the cooked rice among serving bowls.
  2. Top each bowl with the turkey taco filling, black beans, corn, diced tomatoes, avocado, and shredded cheese.
  3. Add a dollop of sour cream or Greek yogurt if desired.

Step 3: Garnish and Serve

  1. Sprinkle with fresh chopped cilantro and serve with lime wedges for squeezing over the top.
  2. Enjoy immediately!

Notes

  • Make It Low-Carb: Swap the rice for cauliflower rice or skip it altogether for a lighter option.
  • Meal Prep: Store the turkey filling, rice, and toppings separately in airtight containers for up to 4 days. Reheat and assemble when ready to eat.
  • Customizable Toppings: Add extras like pickled jalapeños, sliced black olives, or hot sauce to suit your taste.
