  • 250g all-purpose flour

  • 75g unsweetened cocoa powder

  • 120ml vegetable oil
  • 240ml buttermilk
  • 2 large eggs
  • 2 teaspoons vanilla extract (10ml)
  • 240ml hot water or brewed coffee

For the Caramel Sauce:

  • 200g granulated sugar
  • 100g unsalted butter
  • 120ml heavy cream
  • ½ teaspoon salt (3g)
  • 1 teaspoon vanilla extract (5ml)

For the Chocolate Ganache:

  • 200g semi-sweet chocolate chips
  • 120ml heavy cream

For Assembly & Topping:

  • 150g chopped pecans
  • 50g caramel sauce (for drizzle)
  • 50g chocolate ganache (for drizzle)

Instructions

Step 1: Make the Chocolate Cake

  1. Preheat your oven to 175°C (350°F). Grease and line two 20cm (8-inch) round cake pans with parchment paper.
  2. In a large bowl, sift together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk together granulated sugar, brown sugar, vegetable oil, eggs, vanilla extract, and buttermilk.
  4. Gradually add the dry ingredients into the wet ingredients, mixing until just combined.
  5. Pour in the hot water or coffee, stirring gently until the batter is smooth.
  6. Divide the batter evenly between the two cake pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the cakes to cool completely before assembling.

Step 2: Make the Caramel Sauce

  1. In a saucepan over medium heat, melt granulated sugar, stirring constantly until it turns a deep amber color.
  2. Add the butter and stir until fully melted. Slowly pour in the heavy cream, whisking constantly.
  3. Add salt and vanilla extract, then remove from heat. Let the caramel cool to room temperature.

Step 3: Make the Chocolate Ganache

  1. In a small saucepan, heat the heavy cream until it just begins to simmer.
  2. Pour the hot cream over the chocolate chips in a bowl. Let sit for 2 minutes, then stir until smooth and glossy.

Step 4: Assemble the Cake

  1. Place one cooled chocolate cake layer on a serving plate. Spread a generous layer of caramel sauce over the top.
  2. Sprinkle half of the chopped pecans on the caramel.
  3. Place the second cake layer on top. Drizzle with chocolate ganache and more caramel sauce.
  4. Sprinkle the remaining pecans over the top and finish with a final drizzle of caramel and chocolate ganache.
