Vegan Peanut Butter Mousse with Chocolate Ganache

Craving something indulgent but want to keep it plant-based? This Vegan Peanut Butter Mousse is a creamy, dreamy dessert that’s perfectly complemented by a luscious layer of chocolate ganache. Made with simple, wholesome ingredients, this treat is decadent, dairy-free, and super easy to make.

Ingredients (Serves 4)

For the Peanut Butter Mousse:

  • 1 cup coconut cream (chilled overnight)
  • ½ cup creamy peanut butter (natural or no-sugar-added preferred)
  • 3 tablespoons maple syrup (or agave syrup)
  • 1 teaspoon vanilla extract

For the Chocolate Ganache:

  • ½ cup dairy-free chocolate chips
  • ¼ cup coconut cream
  • Pinch of salt

Optional Toppings:

  • Crushed peanuts
  • Shaved chocolate
  • A drizzle of peanut butter

Instructions

Step 1: Make the Peanut Butter Mousse

  1. Chill the Coconut Cream: Scoop the thick part of the chilled coconut cream into a mixing bowl. (Discard the liquid or save it for smoothies.)
  2. Whip the coconut cream with a hand mixer until fluffy.
  3. Add peanut butter, maple syrup, and vanilla extract, then whip again until smooth and creamy.
  4. Divide the mousse evenly into serving glasses or jars and refrigerate for 30 minutes to firm up.

Step 2: Make the Chocolate Ganache

  1. In a small saucepan, heat the coconut cream over low heat until warm (do not boil).
  2. Remove from heat and stir in the dairy-free chocolate chips and a pinch of salt. Let it sit for 1 minute, then stir until smooth and glossy.

Step 3: Assemble & Chill

  1. Spoon the chocolate ganache over the chilled peanut butter mousse, spreading it evenly.
  2. Return to the refrigerator and chill for at least 1 hour, or until set.

Step 4: Add Toppings & Serve

  1. Just before serving, garnish with crushed peanuts, shaved chocolate, or a drizzle of peanut butter for extra flair.
  2. Serve chilled and enjoy the creamy, chocolatey goodness!
