Warm Apple and Goat Cheese Salad Recipe

This Warm Apple and Goat Cheese Salad is a delightful mix of crisp greens, sautéed apples, creamy goat cheese, and crunchy nuts, all drizzled with a tangy vinaigrette. Perfect as a light lunch or an elegant starter!


Ingredients

For the Salad:

  • 6 cups mixed salad greens (arugula, spinach, or your choice)
  • 2 medium apples, thinly sliced
  • 1 tbsp olive oil
  • 4 oz goat cheese, crumbled
  • 1/3 cup candied pecans or walnuts
  • 1/4 cup dried cranberries

For the Vinaigrette:

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Prepare the Vinaigrette:
    • In a small bowl or jar, whisk together olive oil, apple cider vinegar, honey (or maple syrup), Dijon mustard, salt, and pepper. Set aside.
  2. Sauté the Apples:
    • Heat 1 tbsp olive oil in a skillet over medium heat. Add the apple slices and cook for 3–5 minutes until slightly softened and golden, flipping occasionally. Remove from heat.
  3. Assemble the Salad:
    • Arrange the mixed greens on a serving platter or individual plates. Top with sautéed apples, crumbled goat cheese, candied pecans, and dried cranberries.
  4. Drizzle and Serve:
    • Drizzle the vinaigrette over the salad just before serving. Toss lightly if desired. Serve warm and enjoy!
