Ingredients:

  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar (icing sugar)
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon cornstarch
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Optional: colored sugar or sprinkles (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Cream the Butter and Sugar: In a large bowl, beat the softened butter and powdered sugar together using an electric mixer or stand mixer. Beat on medium-high speed until the mixture is light, fluffy, and creamy, about 5-7 minutes. This is the key to achieving the melt-in-your-mouth texture!
  3. Add the Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Gradually add the flour mixture to the butter mixture, mixing on low speed until combined. Add the vanilla extract and mix until just incorporated.
  4. Shape the Cookies: Using a spoon or cookie scoop, scoop about 1 tablespoon of dough and roll it into a ball. Place the dough balls onto the prepared baking sheet, spacing them about 2 inches apart. For a decorative touch, you can gently flatten the dough balls with the back of a spoon or your fingers. Optionally, sprinkle the tops with colored sugar or decorative sprinkles.
  5. Bake the Cookies: Bake for 12-15 minutes, or until the edges are lightly golden. The centers of the cookies should remain soft and pale.
