  • 150g curly kale, stems removed, leaves chopped
  • 1 tablespoon olive oil (15g)
  • 1 tablespoon butter (15g) (optional for richness)

Broth Base:

  • 1 liter vegetable broth
  • 100ml dry white wine (optional, for deglazing and flavor depth)
  • 1 tablespoon soy sauce or tamari (for added umami)
  • Salt and freshly ground black pepper, to taste

Optional Garnishes:

  • Fresh thyme or rosemary
  • Crusty bread or toasted sourdough for serving
  • Grated parmesan (omit for vegan option)

Step 1: Caramelize the Onions

  1. In a large pot or Dutch oven, heat the olive oil and butter over medium heat.
  2. Add the sliced onions with a pinch of salt. Cook slowly, stirring occasionally, for about 20–25 minutes until they are golden brown and caramelized. Lower the heat if they begin to brown too quickly.
