Wild Mushroom, Caramelized Onion, and Kale Soup

This earthy and comforting soup brings together savory wild mushrooms, sweet caramelized onions, and nutrient-rich kale in a flavorful broth. Perfect for cozy nights, this soup is both hearty and healthy, making it a fantastic addition to your fall and winter recipe collection!


Ingredients

✅ 2 tablespoons olive oil
✅ 1 tablespoon butter
✅ 1 large onion, thinly sliced
✅ 3 cloves garlic, minced
✅ 8 ounces wild mushrooms (such as cremini, shiitake, or oyster), sliced
✅ 1 teaspoon fresh thyme (or ½ teaspoon dried)
✅ ½ teaspoon salt (adjust to taste)
✅ ½ teaspoon black pepper
✅ ¼ teaspoon red pepper flakes (optional, for a little heat)
✅ 4 cups vegetable or chicken broth
✅ 1 cup water
✅ 2 tablespoons balsamic vinegar
✅ 1 bunch kale, stems removed and leaves chopped
✅ ½ cup heavy cream (optional for a creamy version)
✅ Grated Parmesan or nutritional yeast (for garnish, optional)


Instructions

Step 1: Caramelize the Onions

???? In a large pot, heat olive oil and butter over medium-low heat.
????‍???? Add the thinly sliced onions and cook for 20-25 minutes, stirring occasionally, until they turn deep golden brown.

Step 2: Sauté the Mushrooms & Garlic

???? Increase heat to medium and add the sliced mushrooms.

???? Cook for 5-7 minutes until mushrooms are tender and slightly browned.

Step 3: Simmer the Soup

Step 4: Add the Kale
